  • 0.5 Pounds of bacon, diced
  • 1 Large Onion, Chopped
  • 2 Tablespoons Minced Garlic
  • 1 Teaspoon Thyme
  • 1 Pound Dried Navy Beans (Cleaned)
  • 1 Cup of Strong Coffee
  • 0.75 Cups Barbeque Sauce
  • 0.33 Cup Packed Dark Brown Sugar
  • 2 Tablespoons Brown Mustard
  • 1 Tablespoon Dark Molasses
  • 1 Teaspoon Hot Sauce
  • 0.5 Teaspoon Black Pepper
  • 8 Cups Water
  • 2 Teaspoons Salt

Preparation Steps

  1. In a heavy dutch oven, cook bacon until very crisp over medium-high heat.
  2. Add the onions and cook for about 5 minutes until caramelized.
  3. Add garlic and thyme, and cook for another minute.
  4. Add the remaining ingredients and bring to a rapid boil.
  5. Cover the pot, transfer it to the oven, and bake for 2 hours at a moderate oven temperature.
  6. Remove the pot from the oven and stir the beans. Recover the pot and bake until the beans are very tender (about an hour longer).
  7. After the beans are tender, remove the lid and continue baking until the liquid has condensed into a thick, hearty sauce.
