Recipe: Southern Chicken Pot Pie

Ingredients List

  • 2 pounds of boneless, skinless chicken, cut into 1-inch pieces
  • 1.5 Tsp Salt
  • 0.75 Tsp Black Pepper
  • 1 Tbsp Olive Oil
  • 3 Tbsp Butter / 3 Tbsp Melted Butter
  • 1 Pound Button Mushrooms, stemmed and quartered
  • 1.5 Cups Diced Onion
  • 0.75 Cups Diced Carrot
  • 0.75 Cups Diced Celery
  • 1 Tablespoon Minced Garlic (or 2 teaspoons granulated garlic)
  • 0.25 Cups All Purpose Flour
  • 4 Cups Chicken Stock
  • 8 Ounces potatoes, diced
  • 1 Teaspoon thyme
  • 0.5 Cups Green Peas
  • 1 Recipe Biscuits (12)

Preparation Steps

  1. Preheat oven to 475°F.
  2. In a large mixing bowl, combine chicken with 1 teaspoon of salt, 0.5 teaspoons of black pepper, and olive oil.
  3. Sear chicken in a large skillet over medium-high heat for 5 minutes, then set aside in a bowl.
  4. In the same skillet, add butter and sauté the mushrooms, onions, carrots, celery, and garlic for five minutes.
  5. Add flour and cook for another couple of minutes while constantly stirring.
  6. Add chicken stock, browned chicken, potatoes, and thyme. Bring to a boil, then simmer for about 30 minutes until potatoes are tender.
  7. Stir in the green peas and remove from heat.
  8. Place biscuits on top of the chicken and gravy so that they do not touch. Brush the tops of the biscuits with melted butter.
  9. Bake until the biscuits are golden brown, about 15 minutes.
