- 0.5 Pounds of bacon, diced
- 1 Large Onion, Chopped
- 2 Tablespoons Minced Garlic
- 1 Teaspoon Thyme
- 1 Pound Dried Navy Beans (Cleaned)
- 1 Cup of Strong Coffee
- 0.75 Cups Barbeque Sauce
- 0.33 Cup Packed Dark Brown Sugar
- 2 Tablespoons Brown Mustard
- 1 Tablespoon Dark Molasses
- 1 Teaspoon Hot Sauce
- 0.5 Teaspoon Black Pepper
- 8 Cups Water
- 2 Teaspoons Salt
Preparation Steps
- In a heavy dutch oven, cook bacon until very crisp over medium-high heat.
- Add the onions and cook for about 5 minutes until caramelized.
- Add garlic and thyme, and cook for another minute.
- Add the remaining ingredients and bring to a rapid boil.
- Cover the pot, transfer it to the oven, and bake for 2 hours at a moderate oven temperature.
- Remove the pot from the oven and stir the beans. Recover the pot and bake until the beans are very tender (about an hour longer).
- After the beans are tender, remove the lid and continue baking until the liquid has condensed into a thick, hearty sauce.
