- 2 pounds of boneless, skinless chicken, cut into 1-inch pieces
- 1.5 Tsp Salt
- 0.75 Tsp Black Pepper
- 1 Tbsp Olive Oil
- 3 Tbsp Butter / 3 Tbsp Melted Butter
- 1 Pound Button Mushrooms, stemmed and quartered
- 1.5 Cups Diced Onion
- 0.75 Cups Diced Carrot
- 0.75 Cups Diced Celery
- 1 Tablespoon Minced Garlic (or 2 teaspoons granulated garlic)
- 0.25 Cups All Purpose Flour
- 4 Cups Chicken Stock
- 8 Ounces potatoes, diced
- 1 Teaspoon thyme
- 0.5 Cups Green Peas
- 1 Recipe Biscuits (12)
Preparation Steps
- Preheat oven to 475°F.
- In a large mixing bowl, combine chicken with 1 teaspoon of salt, 0.5 teaspoons of black pepper, and olive oil.
- Sear chicken in a large skillet over medium-high heat for 5 minutes, then set aside in a bowl.
- In the same skillet, add butter and sauté the mushrooms, onions, carrots, celery, and garlic for five minutes.
- Add flour and cook for another couple of minutes while constantly stirring.
- Add chicken stock, browned chicken, potatoes, and thyme. Bring to a boil, then simmer for about 30 minutes until potatoes are tender.
- Stir in the green peas and remove from heat.
- Place biscuits on top of the chicken and gravy so that they do not touch. Brush the tops of the biscuits with melted butter.
- Bake until the biscuits are golden brown, about 15 minutes.
