Ingredients List

  • 4 Ounces Bacon, Diced
  • 2 Cups Chopped Onion
  • 2 Cups Chopped Celery
  • 0.25 Cups Chopped Bell Pepper
  • 0.25 Cups Chopped Jalapeno (seed if you don’t want the extra heat)
  • 3 Tablespoons Minced Garlic (or 2 teaspoons granulated garlic)
  • 0.5 Teaspoon Thyme
  • 1 Tablespoon Cajun Seasoning
  • 1 Teaspoon Salt
  • 2 Teaspoons Black Pepper
  • 1 Teaspoon Cayenne
  • 0.25 cups Chopped Green Onion
  • 2 Tablespoons Parsley
  • 1.5 Pounds Ground Beef (lean)
  • 0.75 Pounds Hot Pork Sausage
  • 1.5 Cups Panko Bread Crumbs
  • 2 eggs, beaten
  • .75 Cup Heavy Cream
  • 1 Cup Barbeque Sauce for Glazing (or the glaze of your choice)

Preparation Steps

  1. Preheat oven to 375°F.
  2. Cook bacon in a large skillet over medium heat until crisp.
  3. Add onion, celery, bell pepper, and jalapenos. Cook for about ten minutes until vegetables are soft.
  4. Add garlic, thyme, Cajun seasoning, salt, pepper, and cayenne, and cook for a couple of minutes.
  5. Stir in green onions and parsley, then remove from heat and let cool.
  6. Crumble beef and sausage into small pieces in a large bowl. Add cooled vegetable mixture and bread crumbs.
  7. In a separate bowl, whisk eggs and cream. Pour this over the meat mixture and gently mix (avoid overworking the meat).
  8. Shape into a wide loaf and place on a baking sheet.
  9. Glaze with barbeque sauce, coating evenly.
  10. Bake uncovered for about an hour until the center temperature reads 160°F.
  11. Allow the loaf to rest for at least 20 minutes before slicing.
