- 4 Ounces Bacon, Diced
- 2 Cups Chopped Onion
- 2 Cups Chopped Celery

- 0.5 Teaspoon Thyme
- 1 Tablespoon Cajun Seasoning
- 1 Teaspoon Salt
- 2 Teaspoons Black Pepper

- 0.25 cups Chopped Green Onion
- 2 Tablespoons Parsley
- 1.5 Pounds Ground Beef (lean)
- 0.75 Pounds Hot Pork Sausage
- 1.5 Cups Panko Bread Crumbs
- 2 eggs, beaten
- .75 Cup Heavy Cream
- 1 Cup Barbeque Sauce for Glazing (or the glaze of your choice)
Preparation Steps
- Preheat oven to 375°F.
- Cook bacon in a large skillet over medium heat until crisp.
- Add onion, celery, bell pepper, and jalapenos. Cook for about ten minutes until vegetables are soft.
- Add garlic, thyme, Cajun seasoning, salt, pepper, and cayenne, and cook for a couple of minutes.
- Stir in green onions and parsley, then remove from heat and let cool.
- Crumble beef and sausage into small pieces in a large bowl. Add cooled vegetable mixture and bread crumbs.
- In a separate bowl, whisk eggs and cream. Pour this over the meat mixture and gently mix (avoid overworking the meat).
- Shape into a wide loaf and place on a baking sheet.
- Glaze with barbeque sauce, coating evenly.
- Bake uncovered for about an hour until the center temperature reads 160°F.
- Allow the loaf to rest for at least 20 minutes before slicing.
