Recipe: Banana Nut Bread (cake)

Banana Nut Bread is a moist, delicious cake that combines the sweet flavors of ripe bananas with the crunch of pecans or walnuts. This recipe is perfect for a comforting snack or dessert.

Ingredients List

  • 2 cups Sugar
  • 0.5 tsp Salt
  • 2.25 cups Flour
  • 0.75 cups Vegetable Oil
  • 3 Large Eggs
  • 1 tsp Vanilla Extract
  • 2 tsp Baking Soda
  • 0.25 cups Buttermilk
  • 1 cup Chopped Pecans (or Walnuts)
  • 5 Well Ripened (Soft) Bananas

Preparation Steps

  1. Preheat oven to 350°F. Grease two loaf pans or a single Bundt pan.
  2. In a large mixing bowl or stand mixer, mash the bananas.
  3. Add sugar, vegetable oil, eggs, and vanilla extract to the bananas and combine well.
  4. Gradually add flour and baking soda to the mixture and mix until a smooth, lump-free consistency is achieved.
  5. Stir in buttermilk and chopped pecans (or walnuts).
  6. Pour the batter into the prepared pans.
  7. Bake at 350°F for about an hour, or until a toothpick inserted into the center comes out almost clean.
  8. Let the bread cool for about 20 minutes before removing from the pans. Alternatively, for later use, cover pans with foil, place in a gallon freezer bag, and freeze.
