Recipe: Chocolate Ganache

Chocolate Ganache is a rich and creamy chocolate mixture, perfect for glazing, filling, or frosting cakes and pastries. For thick mixtures like ganache, using a double boiler can prevent scorching and ensure even heat distribution.

Note on Using a Double Boiler: When heating ingredients with low moisture content, like chocolate, it’s advisable to use a controlled, low heat to avoid scorching. A double boiler is an excellent tool for this purpose. It consists of a small pot that fits snugly into a larger pot. The larger pot is filled with boiling water, and the steam heats the smaller pan to a consistent temperature of 212°F, which is ideal for melting chocolate without burning it.  If you don’t have one, place a small saucepan in your biggest skillet (adding water) and pretend.

  1. In a small saucepan or double boiler, bring the heavy cream to a boil over high heat.
  2. Remove from heat and whisk in the chocolate chips until the mixture is smooth.
  3. Let the ganache cool, stirring occasionally to prevent lumps from forming.

  • Makes: About 1.5 cups of ganache

Tips or Variations

  • For a thinner ganache, increase the amount of heavy cream.
  • Flavor variations can be achieved by adding a splash of vanilla extract, a pinch of sea salt, or a few drops of your favorite liqueur.
